Irish Soda Bread Muffins

Again another gem from Taste of Home.

2 1/4 cups of all-purpose flour
1/2 cup plus 1 Tablespoon sugar, divided
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1 teaspoon caraway seeds
1 egg
1 cup buttermilk
1/4 cup butter, melted
1/4 cup vegetable oil
3/4 cup dried currants or raisins

In a large bowl, combine the flour, 1/2 cup sugar, baking powder, salt, baking soda and the caraway seeds. In another bowl, beat the egg, buttermilk, butter and oil. Stir into dry ingredients just until moistened. Fold in currants.

Fill greased muffin cups three-fourths full. Sprinkle with remaining sugar. Bake at 400 degrees for 15 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to wire rack. Serve warm. Yield: 1 dozen.
